The chestnuts of the priest originate from an ancient preservation process, probably devised by the Irpinia monks, obtained by smoking with chestnut wood, on particular trellises called “gratali”. They are ready to be consumed. If you want a softer product that is easier to peel, simply dip it in water for a few minutes before consumption.
